ππ₯¦π Chicken Broccoli Rice ππ₯¦π
The One-Pan Wonder π§ππ₯¦
Ingredients:
π 1 lb boneless, skinless chicken breasts (chopped into bite-sized greatness)
π₯¦ 2 cups broccoli florets (fresh or frozen, we don’t judge)
π 1 cup long-grain white rice (the fluffy foundation of happiness)
π§ 1 cup shredded cheddar cheese (optional, but let’s be real—cheese is never optional)
π§ 2 cloves garlic, minced (the key to unlocking flavor heaven)
π§ Salt and pepper to taste
π€ Optional: Ranch dressing (because why not?)
Instructions:
π₯ Step 1: Chicken First, Always
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until it looks all soft and golden (3-4 minutes).
Toss in chicken pieces, season generously, and cook until beautifully browned and fully cooked (5-7 minutes).
Remove the chicken and set aside (try not to eat it all yet).
π Step 2: Toast That Rice
In the same skillet (because we’re all about less cleanup), add the uncooked rice and stir it for about a minute to get that nutty, toasty flavor.
Pour in chicken broth, bring to a boil, then reduce the heat.
Cover and simmer for 15 minutes while you resist the urge to peek.
π₯¦ Step 3: Broccoli & Cheese Party
After the rice has cooked, stir in the broccoli florets and return the chicken to the skillet.
Cover and let everything cook for another 5-7 minutes until the broccoli is tender and the rice is fully done.
π§ Step 4: Bake to Perfection
Transfer everything to an oven-safe dish.
Sprinkle cheddar cheese all over like a generous gift.
Bake at 350˚F for 20 minutes or until the cheese is melted and bubbly.
π½️ Step 5: Serve & Devour
Fluff it up with a fork, grab a plate, and enjoy your cheesy, comforting, ridiculously good Chicken Broccoli Rice!
π₯ Bonus Tip: Drizzle Ranch on top for an extra zing!
Enjoy, and prepare for second helpings! π
